Morning Sunshine Pancakes

Ingredients

  • 200g Gluten free flour
  • 50g Quinoa flour
  • 1tsp Baking powder
  • 1 x Egg
  • 25g Melted PURE soya spread / butter
  • 250ml Natural yogurt or soya yogurt
  • 15g Xylitol
  • Handful of dried or fresh fruit chopped small

 

Method

  1. Mix egg, butter and yogurt together
  2. Place dry ingredients in a bowl and slowly add the mixed wet ingredients
  3. Add fruit
  4. Beat well until smooth and thick
  5. Allow to stand for 10 minutes
  6. Drop dollops of mixture into a hot, non-stick frying pan
  7. Cook and flip until golden. Serve warm

Try these for a bright start to the day. Vary your fruit and top with a tsp of chopped nuts or seeds and a dollop of yogurt for a weekend treat.
