Cashew Cream

 This creamy topping is an ideal acompaniment to crumbles, fruit compotes and other puddings when you need to avoid dairy cream.  Try it with our Light Apple Crumble.


  • 4 oz raw unsalted cashews, whole or pieces
  • 2 dates, chopped
  • water
  • ½ tsp vanilla extract


Cover cashews and dates with water, leave to soak overnight in refrigerator….

Next day strain cashews and dates and discard the water. Put cashews and dates in a bowl and add enough water to cover halfway, add vanilla extract. Put 1/3 mixture in an electric spice or coffee grinder and blend until creamy. Remove to a bowl and add next 1/3 and repeat until all mixture has been ground. If too stiff, add more water until desired consistency of cream. Chill until ready to use.
