Chocolate Brownie Cake (Gluten and dairy free)

2 oz dark chocolate
4 oz dairy free spread (or butter if not dairy free)
2 beaten eggs
3oz brown sugar or other natural sweetener like xylitol or fructose (use 2oz)
2 oz rice flour
1 tsp gluten free baking powder
4 oz chopped nuts e.g. walnuts or almonds

Pre-heat oven to gas 4, 180C or 350F.
Line base of 7″ x 11″ baking tin with greaseproof paper and grease it.
Melt broken chocolate and spread together in basin over simmering water in saucepan. Then stir in all the other ingredients. Spread the mixture in the tin and bake for 30 minutes. Leave mixture to cool in tin for 10 minutes before dividing into squares and transferring them to a wire rack to finish cooling. Drizzle with melted dark chocolate. Serve with cashew cream or ice with chocolate and decorate for a special event.
